Story
Dish up the red meat, eggs, and whole milk! In this well-researched and captivating narrative, veteran food writer Nina Teicholz proves how everything we've been told about fat is wrong. For decades, Americans have cut back on red meat and dairy products full of "bad" saturated fats. We obediently complied with nutritional guidelines to eat "heart healthy" fats found in olive oil, fish, and nuts, and followed a Mediterranean diet heavy on fruits, vegetables, and grains. Yet the nation's health has declined. What is going on?

Heart disease is the number-one killer. However, traditional heart disease protocols - with their emphasis on lowering cholesterol - have it all wrong. Emerging science is showing that cholesterol levels are a poor predictor of heart disease and that standard prescriptions for lowering it, such as ineffective low-fat/high-carb diets and serious, side-effect-causing statin drugs, obscure the real causes of heart disease. The Great Cholesterol Myth reveals the real culprits of heart disease.

Since the introduction of dietary guidelines calling for reduced fat intake in the 1970s, a strange phenomenon has occurred: Americans have steadily, inexorably become heavier, less healthy, and more prone to diabetes than ever before. After putting more than two thousand of his at-risk patients on a wheat-free regimen and seeing extraordinary results, cardiologist William Davis has come to the disturbing conclusion that it is not fat, not sugar, not our sedentary lifestyle that is causing America’s obesity epidemic—it is wheat.

We all know the dangers of sugar and salt: but the danger attributed to the second white crystal has more to do with getting too little of it, not too much. Too little salt can shift the body into semi-starvation mode, causing insulin resistance, and may even cause twice as much fat to be absorbed for every gram that's consumed. Too little salt in certain populations can also actually increase blood pressure as well as resting heart rate.

Story
Leading health blogger Jimmy Moore and researcher and internist Dr. Eric C. Westman join forces again to explain the powerful therapeutic effects of a ketogenic diet—one that combines a customized carbohydrate restriction, moderation of protein intake, and real food-based fats—which is emerging in the scientific literature as a means for improving a wide range of diseases, from Type 2 diabetes to Alzheimer's and more. Simply eating a low-carb diet alone isn't enough, and Moore and Westman tell you why. Have you looked at a low-carb diet simply as a means to lose weight? What if you learned that combining a low-carb nutritional approach with a high fat intake produces a powerful therapeutic effect on a wide variety of health conditions that most people think requires medication to control? That’s what Keto Clarity is all about. Jimmy Moore, a leading low-carb diet blogger and podcaster, has reunited with his Cholesterol Clarity co-author Dr. Eric C. Westman, a practicing internist and low-carb diet researcher, to bring you the crystal-clear information you need to understand what a ketogenic diet is and why it may be the missing element in your pursuit of optimal health. This book includes exclusive interviews from twenty of the world's foremost authorities from various fields bringing their depth of expertise and experience using this nutritional approach. Moore and Westman explain why ketosis is normal and how this nutritional approach is being used therapeutically by many medical professionals. You will find a step-by-step guide to help you produce more ketones and track your progress, real life success stories, and more. The solid evidence for nutritional ketosis in dealing with many of the chronic health problems of our day is presented, including but not limited to: epilepsy, Type 2 diabetes, obesity, cardiovascular disease, metabolic syndrome, polycystic ovarian syndrome, irritable bowel syndrome.

Publisher's Summary
Worry about cholesterol. Avoid red meat. Eat whole grains. Could it all be a lie? We live in an era of health hype and nutrition propaganda, and we are suffering for it. Decades of avoiding egg yolks, choosing margarine over butter, and replacing the real foods of our ancestors with low-fat, processed, packaged substitutes have left us with an obesity epidemic, ever-rising rates of chronic disease, and, above all, total confusion about what to eat and why. This is a tragedy of misinformation, food industry shenanigans, and cheap calories disguised as health food. It turns out that everything we've been told about how to eat is wrong. Fat and cholesterol are harmful to your health? Nope - they are crucial to your health. Whole grains are health food? Not even close. Counting calories is the way to lose weight? Not gonna work - nutrients are what matter. Nutrition can come from a box, bag, or capsule? Don't count on it!
In Eat the Yolks, Liz Wolfe debunks all these myths and more, revealing what's behind the lies and bringing the truth about fat, cholesterol, protein, and carbs to light. You'll be amazed at the tall tales we've been told in the name of healthy eating. With wit and grace, Wolfe makes a compelling argument for a diet based on Paleo foods. She takes us back to the foods of our ancestors, combining the lessons of history with those of modern science to uncover why real, whole food - the kind humans ate for thousands of years before modern nutrition dogma led us astray - holds the key to amazing health and happy taste buds. In Eat the Yolks, Liz Wolfe doesn't just make a case for eating the whole egg. She uncovers the shocking lies we've been told about fat, cholesterol, protein, carbs, and calories and brings us the truth about which foods are healthy - and which foods are really harming us.

Mostly good, some soapbox times though.
About 70% of the material presented was neutral (diet independent) and based on solid information, 20% seemed to be repeated throughout the book, maybe to add a few more pages, 10% was purely soapbox material... promoting the Paleo way.
Overall, it is a good book, though I liked "The Fat Switch" better, and offered basically the same materialbut backed with more scientific facts.

Haven't we learned anything?
Any additional comments?
The author is correct: We have been sold a bill of goods about nutrition in the last half century. It's becoming more and more clear that the low fat/high carb diet we were told was healthy for us might not be the ideal diet, and may have significant unintended consequences--obesity, diabetes, heart disease. Scientists and health authorities took their hypotheses and made us subjects in a huge non-controlled experiment.
Rather than take from this mistake a humility in approaching health and diet issues, the author uses this error to promote her ideas about nutrition and "ancestral diets". Maybe these ideas are right. Maybe they are wrong. The science isn't there yet, and it may take decades before we know for sure. Nutrition science is hard. It's easy to cherry pick the literature to find support for a lot of different theories. The fact that people made errors in the past doesn't justify supporting other inadequately supported hypotheses.
Read Gary Taubes' books for a more balanced, critical appraisal of the state of nutrition science.

Fantastic Book, Some Audio Issues
I'm absolutely sold on the idea of a paleo diet and this book has definitely changed my life in that way. I've been guessing so much with my food choices but now I have some guidelines that I can slowly work towards in my daily life to achieve the health I desire. I was in my car hearing some deep bass and wondering if someone was next to me playing music, then later on realized I was hearing it again. Not sure if it was a fan in the recording room but there's extremely loud sub bass under whole sections of this recording that was pretty distracting. Made the voice sound robotic from the compression caused by the bass. Performance was great and I'm a huge fan of this book other than that! Thanks a lot for the knowledge, I'm getting my mom into it also. Peace out!

Grade A Book!
Would you listen to Eat the Yolks again? Why?
Definitely will read more than once because so much fantastic information and research. It's a book you want to absorb all the content and put it into practice.
What did you like best about this story?
I love all the research and statistics. I love the breakdown of all the nutrients. I loved the humor mixed in to keep it entertaining as you learn things. Can you tell I loved it all!
What does Liz Wolfe bring to the story that you wouldn’t experience if you just read the book?
With Liz reading it she was able to modulate her voice to pertinent areas. For example, you could tell by her inflection when she was sarcastic, or hear the laughter in her tone when saying something humorous, and even hear her sing! Since she wrote it she knew how it should sound to someone listening. Excellent as an audio version and makes me want a hard copy also so I can highlight areas!
Was this a book you wanted to listen to all in one sitting?
Definitely, I couldn't get enough!
Any additional comments?
This is a book with so much meat to it! Yes, pun intended! You'll find sooo much information but expressed where you want more and more. This isn't your boring school text, it's filled with Wolfe's awesome humor mixed in! Having listened to Liz on the Balanced Bites podcast I knew this would be a Grade A book! It's a book I will read again and again!

Informative and Entertaining
Liz does a great job of discussing some of the major issues the nutrititon industry is facing, and while the majority of it comes under the 'paleo' umbrella it's a good read for anyone regardless of their diet philosophy. The major macro-nutrients, fat, carbs and protein and the myths surrounding them that has caused their our diet industry to become so rancid are discussed, and some micronutrients are covered as well.
The core philosophy - eat real food, choose it from sustainable sources that aren't affecting the quality of the food or our environment.
Liz is easy to listen to and has inserted her sense of humour nicely into the book, but overall you feel like you've come out the other end having been educated moreso than just told jokes to.
